“At 11 years old, I was working at Allouette’s, seeing the beauty and savoring the flavor of all the dishes.”

Signature dish – Maple-cured duck with a black-eyed pea cake and signature tomato marmalade.

Best compliment to the chef – An empty plate.

My guilty pleasure – Late-night chocolate.

Weirdest thing i’ve eaten – Chitterlings.

Culinary pet peeve – Lack of respect for the food being prepared.

Must-have kitchen tool – Blender.

Biggest cooking challenge – Opus 2007: To serve 700 people an exceptional four-course meal in one hour.

Where i eat on my night off – I don’t take nights off.

When I’m home I eat – I don’t. I’m always at work.

These days, i’m crazy about
– Local peaches and tomatoes from Collins Round Mountain Orchard in Conway.

Chef recommends – Taking advantage of the beautiful produce that Arkansas, The Natural State, has to offer.
