Biggest cooking challenge – My biggest challenge after all these years in the culinary world is keeping things new, fresh and exciting.
Where I eat on my night off – At home, but I wouldn’t hesitate to dine at any of the good, independent restaurants this city is blessed with.
Must-have kitchen tool – Chef’s knife: it’s my slicer, dicer, bottle opener, etc. I abuse the hell out of mine.
These days, i’m crazy about – Watching young cooks develop and move towards becoming excellent chefs.
