Most Gratifying Moment  
BC: Working in Houston, I’ve had the opportunity to cook for many celebrities. It’s very rewarding to know that people who are well-traveled and have eaten at many fine restaurants really enjoy the meals I’ve made for them.

NC: When a guest who eats here 2-3 times a week also comes in for their 50th wedding anniversary or other major event. I think it’s a huge compliment when people want to come in for every occasion, large or small.

NC: 18 years. BC: 15 years.

2 | Inspiration

BC: Cooking was always a huge part of my family’s traditions. I’ve loved cooking since I was young.

BC: Ideas come to me from books, my experiences, and working with others in this industry.

4 | Ambience

NC: Upscale dining, lots of energy. Friendly, efficient service.

NC: Salmon salad, bruschetta, beef carpaccio, scallops.

6 | Schedule

BC: I work 10-12 hours a day.

7 | D’Jour

NC: We change the menu seasonally, but keep a few core items year-round.

NC: I am always curious about what others are up to, but my primary focus is what’s going on at Ya Ya’s.

9 | Dream Guest

BC: Clint Eastwood. The Good, The Bad and The Ugly is one of my favorite movies.

10 | Friends

NC: Of course. Who wouldn’t want a dining room full of friends?
