This fresh and flavorful dish is perfect for the last days of summer. This recipe is provided by the Arkansas Heart Hospital as one of a four-part series – check out last week’s crab cakes here.
The Heart Hospital is the presenting sponsor of the American Heart Association’s Festival of Wines on Oct. 6 at Dickey-Stephens Park. At the festival, guests will be able to sample foods from over 15 local restaurants and sample from hundreds of wines.
This week the wine pairings are provided by event co-chair Kaitlin White, who started her career in the wine industry.
White recommends the following wines for this colorful dish:

Heirloom Tomato and Watermelon Salad
The Ingredients:

2 lbs. fresh watermelon, seeded (¾ inch cubed)

2lbs ride heirloom tomatoes, cut into ¾ inch cubes (the more varied colors the better)

1 cup Feta cheese

½ cup thinly sliced basil
-
1 small red onion, thinly sliced

½ cup Red wine vinegar
-
¼ cup extra virgin olive oil
-
Cracked black pepper
The Instructions: Mix all ingredients together, chill for 2 hours, and serve.
