Can we get a hallelujah for elastic waistbands?
There’s no reason to raise your hands. We’re just going to assume the rest of you hit a few delicious speedbumps in your 2016 fitness plans that we like to call “Valentine’s Day” and “the Super Bowl,” and that you’re right there with us in your stretchy pants.
Whether or not you’re actually on the chocolate gravy train with us, you can still enjoy and benefit from this tasty recipe we picked up at the Natural Grocers grand opening last month.

Sautéed Kale with Red Onion and Peppers
The Ingredients:
- 1 bunch kale, rinsed and torn into bite-sized pieces
- 1/2 onion, thinly sliced
- 1/2 red bell pepper, julienned
- coconut oil
- salt to taste
The Details:
Melt coconut oil over medium heat. Add peppers and onions. Once the onions are translucent, add about half of the kale and season with salt. Press the mixture down using the lid of a pan. Once the kale has softened, add the remainder of the kale to the pan. Press down again with the lid. Stir occasionally until all the kale is softened to your liking.
