Along with the first day of fall comes the official launch of baking season. We can smell the sweet aromas wafting through our homes already. One of my favorite things to bake – anything and everything that includes pumpkin.
P. Allen Smith shares his grandmother’s pumpkin oatmeal cookie recipe with us for this week’s Taste of Tuesday feature. On his website, he writes his grandmother used to make these cookies for him during Halloween and that they are a tasty variation of another autumn favorite, pumpkin pie. Grandmother = homemade = delicious.
Here’s the recipe.
Ingredients:
- 2 cups self-rising flour
- 1/2 tsp. cinnamon
- 1/2 tsp. baking soda
- 1 1/2 sticks butter, cold
- 2 cups old fashioned oats
- 3/4 cup brown sugar
- 1/2 cup walnuts, chopped
- 1/2 cup pumpkin puree
- 1/4 cup honey
