Taste of Tuesday: Dark Chocolate Cherry Crepes with Amaretto Mascarpone Filling

Dark Chocolate Cherry Crepes with Amaretto Mascarpone Filling

The Ingredients:

Crepes:

  • 1 cup all-purpose flour
  • 1/4 cup good quality cocoa powder
  • 1/2 cup milk
  • 1/2 cup water
  • 3 tbsp. sugar
  • 2 eggs
  • 2 tbsp. melted butter

Amaretto Mascarpone Filling:

  • 2 cups mascarpone or cream cheese (softened or room temperature)
  • 1/4 cup powdered sugar
  • 2-3 tbsp. amaretto (or almond extract)

Black Cherry Preserves:

  • 3 cups frozen and pitted black cherries
  • 1/4 cup sugar (add more/less to your preference)
  • 1/2 cup water
  • 1 tbsp. corn starch
