Dark Chocolate Cherry Crepes with Amaretto Mascarpone Filling
The Ingredients:
Crepes:
- 1 cup all-purpose flour
- 1/4 cup good quality cocoa powder
- 1/2 cup milk
- 1/2 cup water
- 3 tbsp. sugar
- 2 eggs
- 2 tbsp. melted butter
Amaretto Mascarpone Filling:
- 2 cups mascarpone or cream cheese (softened or room temperature)
- 1/4 cup powdered sugar
- 2-3 tbsp. amaretto (or almond extract)
Black Cherry Preserves:
- 3 cups frozen and pitted black cherries
- 1/4 cup sugar (add more/less to your preference)
- 1/2 cup water
- 1 tbsp. corn starch
