It seems like every time we turn around, we see Chef Shuttle delivering people’s favorite meals from their favorite restaurants right to their front door, office, tree fort, etc. And while we love the convenience and deliciousness that Chef Shuttle brings to our lives, it all starts with the incredible dishes that we crave so much from partnering restaurants.
Café Prego is one of those restaurants, and their lasagna is one of those crave-able dishes. If your mouth is already watering, this is your lucky day. Not only has Café Prego graced us with their lasagna recipe, but we also have a giveaway from Chef Shuttle. Stick around after the recipe to learn more.
Café Prego Lasagna
The Ingredients:
- 1 onion, diced
- 3 garlic cloves, minced
- 1 tsp. salt
- 2 tsp. black pepper
- 1/2 cup fresh basil
- 2 tbsp. oregano
- 24 oz. ricotta cheese
- 2 cups diced mushrooms
- 1 scrambled egg
- 16 oz. sautéed spinach
- 2 cups mozzarella
- 2 cups Parmesan
- 1 cup Romano
- lasagna sheets (Café Prego uses gluten free pasta, but any type is fine)
- marinara
The Details:
Preheat oven to 350 and grease or spray a 9×12 dish.
Take onions, mushrooms, garlic and extra virgin olive oil and sauté with salt and pepper. Drain excess water.
Sauté the spinach over medium heat with extra virgin olive oil, then drain the excess water. Mix together ricotta, basil, oregano and egg. Add sautéed spinach and onion mix and stir together.
Lay out the lasagna sheets. Place ricotta cheese mix over the top of the sheets evenly, and then sprinkle with mozzarella, Parmesan and Romano. Place thin layer of marinara. Repeat until desired height of lasagna is achieved.
Cook at 350 degrees for one hour, then remove pan and let it cool for several hours.
Note: If you’d like to serve for several meals, you can cut out pieces, place them on a dish, cover with marinara or Bolognese and reheat at 425 degrees for 10-12 minutes.
