Taste of Tuesday: Arugula Salad with Quinoa, Chicken, Avocado and Sautéed Veggies Recipe

In our May issue of Soirée, we told you all about Heifer International’s stateside branch Heifer USA, and the nonprofit’s Community Supported Agriculture (CSA) program, Foodshed Farms CSA.

As part of the CSA program, shareholders not only receive allotted amounts of sustainably produced goodies from local farms, but they also get weekly newsletters with information about each item’s origins and recipes for utilizing the food’s freshness to its highest potential. 

It just so happens that we got our hands on one of the recipes Heifer USA recently shared, and it’s safe to say we’re in love. See for yourself.

 

Arugula Salad with Quinoa, Chicken, Avocado and Sautéed Veggies

The Ingredients:

  • 1/2 cup quinoa, cooked according to package directions (I prepare with homemade chicken broth or low-sodium veggie broth rather than water for more flavor), warm or room-temperature
  • 1 bunch arugula and/or Romaine lettuces, chopped into strips
  • 1 avocado, diced
  • 2 prepared chicken breasts, or 3 cups chicken diced and warm or room temperature
  • 1/2 zucchini, chopped
  • 2 stocks green garlic, chopped
  • 1/4 onion, sliced
  • 2-3 tbsp olive oil, split
  • 2 tbsp crumbled goat cheese (optional)

For the Dressing:

  • 1 tbsp apple cider vinegar or champagne vinegar
  • 1 tbsp honey
  • 1 tsp dijon mustard
  • 1-2 tbsp olive oil
  • 1-2 tbsp plain greek yogurt (I like Fage for texture)

The Process:

Heat olive oil in a sauté pan over medium heat. Add the zucchini, tomatoes, and onions. Sauté until soft, about 5 minutes. Remove from heat and bring to room temperature. For the dressing, whisk together olive oil, yogurt, vinegar, honey, and mustard. 

Mix together all ingredients and toss with dressing. If desired, top with crumbled goat cheese and course ground black pepper. Yields two servings or four sides. Serve immediately and enjoy!
