Being short on time doesn’t mean a drive-thru window is in your future. This juicy flank steak recipe is perfect for a last-minute dinner on the grill, and Jill Cady of The Robust Olive has all the mouthwatering details.
Rethinking Flank Steak:
“Flank steak isn’t known for being one of the best cuts of meat, but when marinated, it becomes so tender and so delicious! The cut is usually easy to find and inexpensive, so this recipe can easily be doubled to feed a crowd, or just make extra and use leftovers in steak sandwiches or stir-fry dishes.”

Tender Flank Steak
Ingredients:
- 2-3 lb. flank steak
- 1/2 cup rosemary-infused olive oil (from The Robust Olive)
- 1/4 cup dark chocolate balsamic vinegar (from The Robust Olive)
- 2 tsp. minced garlic
- 1 tsp. cracked pepper
- 1/2 tsp. thyme
- 1/2 tsp. parsley
- 2 tbsp. grainy dijon mustard
- 2 tsp. Neapolitan herb balsamic vinegar (from The Robust Olive)
Instructions:
Rinse steak in hot water and pat dry. Place it in a rimmed baking dish and set aside.
In a small mixing bowl, combine all ingredients and whisk until completely combined.
Pour over steak and turn to coat evenly. Cover with plastic wrap and allow marinating for at least an hour or overnight in the refrigerator.
Preheat grill to high heat. Place meat on the grill and drizzle with remaining marinade. Sear meat on each side for 3-4 minutes for medium rare. Add 1 minute more for medium, 2 minutes for well done.
Remove meat from grill, place on cutting board and allow to rest for at least 3 minutes so the juices redistribute back into meat.
