Recipe: Strawberry Rollups From P. Allen Smith

Strawberry Rollups

The Ingredients:

  • 8 oz. strawberries
  • 1 cup raspberries
  • 3 tbsp. stevia
  • 1 tbsp. fresh mint
  • fresh juice of 1/2 a lime

The Instructions:

Preheat the oven to 275°.

Trim the stems off the strawberries and chop the mint.

Place all ingredients in a blender and puree until smooth.

Add the puree to a saucepan and cook over medium-high heat until thick and jammy.

Spread onto a parchment-lined baking sheet.

Place in the oven and dehydrate for 3-4 hours.

Remove from the oven and let cool completely.

Transfer to a cutting board and cut into strips using a pizza cutter.

Roll them up and enjoy.
