With spring on the way, it's time to change up your cocktail routine. In order to speed the process along, we're setting aside the dark and moody drinks of midwinter and reaching instead for bright, fruity beverages that taste like sunshine.
The team at Colonial Wines & Spirits has put together two recipes — one simple, one signature — centered around peaches and champagne.
Mathilde Sparkling Peach
- 2 oz. Mathilde Peche liqueur
- Toso Brut sparkling wine
Add Mathilde Peche liqueur to a champagne flute and top off with Toso Brut. Garnish with a fresh peach wedge.
Mathilde Peach Passion
- 3/4 oz. Mathilde Peche liqueur
- 1 1/2 oz. Citadelle gin
- 1/2 oz. passion fruit juice
- 1/2 oz. freshly squeezed orange juice
- dash of peach bitters
- dash of grenadine
Fill cocktail shaker with ice and add all ingredients. Shake vigorously until well-chilled. Strain into a well-chilled martini glass and garnish with a mint leaf.
