- 3 lbs. sugar pumpkin, peeled, seeded and cut into 1-to-2-inch cubes
- 1 medium onion, diced
- 1 clove garlic, minced
- 1 tsp. rubbed sage
- 1 tsp. dried rosemary
- 5 cups vegetable stock
- 1 red bell pepper, diced
- 1 cup tomatoes, diced
- 2 medium waxy potatoes, diced
- 1 cup frozen corn kernels, thawed

Creamy Roasted Cauliflower Chowder
Ingredients:
- 1 large head of cauliflower, roughly chopped
- 1 tbsp. olive oil
- 3 cloves garlic
- 1/4 cup unsalted butter
- 1 medium onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 bay leaf
- 1/2 tsp. dried thyme
- 1/4 cup all-purpose flour (can use gluten-free flour)
- 30 oz. vegetable broth
- 1 1/4 cups milk
- 1/2 cup shredded cheddar cheese

Cajun Corn Chowder (vegan and gluten-free)

- 1 medium white onion, peeled and diced
- 1 green bell pepper, cored and diced
- 2 ribs celery, diced
- 4 cloves garlic, peeled and minced
