Pumpkin Chowder

Ingredients:

  • 3 lbs. sugar pumpkin, peeled, seeded and cut into 1-to-2-inch cubes
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1 tsp. rubbed sage
  • 1 tsp. dried rosemary
  • 5 cups vegetable stock
  • 1 red bell pepper, diced
  • 1 cup tomatoes, diced
  • 2 medium waxy potatoes, diced
  • 1 cup frozen corn kernels, thawed
  • fresh ground black pepper to taste

Creamy Roasted Cauliflower Chowder

Ingredients:

  • 1 large head of cauliflower, roughly chopped
  • 1 tbsp. olive oil
  • 3 cloves garlic
  • 1/4 cup unsalted butter
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 bay leaf
  • 1/2 tsp. dried thyme
  • 1/4 cup all-purpose flour (can use gluten-free flour)
  • 30 oz. vegetable broth
  • 1 1/4 cups milk
  • 1/2 cup shredded cheddar cheese
  • salt and black pepper, to taste

Cajun Corn Chowder (vegan and gluten-free)

Ingredients:

  • 1 tbsp. olive oil
  • 1 medium white onion, peeled and diced
  • 1 green bell pepper, cored and diced
  • 2 ribs celery, diced
  • 4 cloves garlic, peeled and minced
  • 6 cups vegetable stock
  • 1 1/2 pounds Yukon gold potatoes, diced into 1/2-inch cubes
  • 1 14-oz. bag frozen corn (or canned whole-kernel corn)
  • 1 cup red lentils, rinsed and picked over
  • 2 tbsp. Cajun seasoning (or more/less to taste)
  • 1 tsp. dried thyme
  • 1 tsp. salt
  • 1 14-oz. can coconut milk

Irish Seafood Chowder

  • 2 large tbsp. butter
  • 2 medium onions, finely diced
  • 2 large carrots, finely diced
  • 4 sticks celery, finely diced
  • 1 leek, finely diced
  • 1 1/2 L fish stock
  • salt and pepper
  • juice of 1 1/2 lemons
  • 750g fresh salmon, diced
  • 500g mussel meat
  • 500g smoked haddock
  • 1kg cod or similar white fish
  • 400ml double cream

Garden Zucchini Chowder

  • 2 medium zucchini, diced
  • 3/4 cup diced onion (1 onion)
  • 2 14-oz. cans chicken broth (about 3 1/2 cups)
  • 1/3 cup butter
  • 1/3 cup flour
  • 1/2 tsp. dried sage
  • 1/2 tsp. garlic powder
  • 1 tsp. dried parsley
  • 1 tsp. lemon juice
  • 1 14-oz. can diced tomatoes, lightly drained
  • 1 can corn, lightly drained
  • 1 12-oz. can evaporated milk
  • 2 cups shredded cheddar cheese
  • 1/4 cup shredded Parmesan cheese
