For the Fried Pastry-Lover: Caramel Cream Cheese Stuffed Churro Ice Cream Sandwiches 


8 oz. cream cheese

2 tsp vanilla extract

4 refrigerated pie crusts, defrosted

4 tablespoons caramel sundae syrup

2 1/2 cups sugar, divided

3 tablespoons cinnamon

4 tablespoons butter, melted

1 carton Vanilla Bean ice cream

For the Martha: Brownie Mint-Chip Ice Cream Sandwich


1 stick unsalted butter, melted, plus more for pan

1 cup sugar

2 large eggs

1/2 teaspoon fine salt

1/2 cup all-purpose flour (spooned and leveled)

1/2 cup unsweetened cocoa powder

2 pints ice cream, softened

For the Minimalist: Vegan Chocolate Coffee Ice Cream Sandwich


1 flax egg (1 Tbsp flaxseed meal + 2 Tbsp water)

1/2 cup unsweetened almond milk

1 tsp white vinegar

1/3 cup raw sugar (I used turbinado)

1 tsp vanilla extract

3 Tbsp melted coconut oil

1/2 cup oat flour (finely ground rolled oats)

scant 1/2 cup whole wheat pastry flour

1/4 cup unsweetened cocoa powder

1 teaspoon baking soda

pinch sea salt

1/4 cup dark/semisweet chocolate chips or chopped bar (non-dairy for vegan)

For the Hesitant Sweet Tooth: Lemon Raspberry Swirl Ice Cream Sandwiches


1 cup whole milk

¾ cup plus 2 tbsp. sugar, divided

2 cups heavy cream, divided

Pinch of salt

6 large egg yolks

1 tsp. vanilla extract

Zest and juice of 1 lemon

6 oz. fresh raspberries

30 (2-2½ inch square) graham crackers (or your choice of cookie – sables would also be great!)
