“Growing up, I spent a lot of time cooking with my family. Some of my fondest childhood memories are of standing in the kitchen or by the grill.”

Signature dish – Arkansas fried catfish crusted with War Eagle Mill cornmeal, served on a bed of fennel apple slaw and topped with Arkansas tomato jam with a War Eagle Mill corn beignet on the side.

Biggest cooking challenge – Working my first Kentucky Derby and running a kitchen that fed 75 suites.

These days, I’m crazy about – I want to support local farms by utilizing as much local food as possible. I’m as passionate about WHAT I cook as I am about HOW I cook. Eating healthy is key to living a healthy life. And preparing foods in an environmentally responsible manner is also important.

Must-have kitchen tool – A Vita Prep blender and a spoon for tasting.

Where i eat on my night off – Saigon or Fantastic China.
