“My first real cooking job was working for Nancy Newell at the Ten-Mile House. She was very creative and her menu was different and varied, so I learned a lot.”

Signature dish – Some say it’s the crab cakes, but I think it’s the shrimp and cheese grits.

Biggest cooking challenge – Keeping up with the demands of the holiday season: special party menus, off-site catering, take-out special desserts, plus regular restaurant and bar service. It’s always hectic…I love it!

These days, I’m crazy about – Red Mango yogurt, barbecued anything, veggie plates from Kitchen Express,
snow cones and pretty much anything that someone else cooks.

Must-have kitchen tool -An iPod; it helps with creativity.

Where I eat on my night off – What night off? In my own home with my family.

Chef recommends – Eating fresh, locally grown foods and supporting local vendors and farmers.
