In April, Three Fold Noodles and Dumpling Co. announced its newest project, a pop-up restaurant called Haybird Chicken set at 215 Center, Three Fold’s original location. And on May 28, that pop-up will be open to the public.
Walking through the doors feels a bit like time travel — it looks almost exactly like it did before Three Fold moved out in 2017 — but the menu is something totally new.

Most of Haybird’s eats are centered around Asian-style fried chicken, a lighter dish than your typical Southern fare, but no less filling. Prepared in gluten-free batter, the chicken is served in a variety of ways, such as on a toasted bun, as nuggets, in a salad or on a bed of thinly sliced “hay” fries.
Other offerings include tofu, house-made pickles and deep-fried mini sesame buns. Pro tip: Try the tomato sauce. It’s like a magical blend of ketchup and sweet and sour sauce.
The Three Fold team plans on keeping Haybird alive for at least a year with the option to operate permanently if all goes well.
