I hope everyone had a wonderful Thanksgiving and took the break to unwind and relax because, ready or not, we’re in the thick of it now. The holidays are no longer knocking on your door; they’ve broken into your home and they’re ready to parrrrtay! You already know you should decorate and get gifts and bake and attend holiday parties and all the things, but no one told us how to be sane this season.
The holidays are cheery for many, yet tough for others. We all play a part in the huge fabric of things, and our combined actions can make or break someone’s holiday spirit. Sometimes the best way to cure a lot is to laugh, care and watch movies together.
So consider this your reminder to slow down. Get cozy with this cookie recipe that you can enjoy while you watch one of the many holiday movies this season.

Perfect Holiday Chocolate Chip Cookies
Ingredients:
- 2 1/4 cups all-purpose flour
- 1/2 cup old fashioned oats (ground up in food processor)
- 1 tsp. baking soda
- 1 tsp. kosher salt (plus more for topping)
- 1/2 tsp. cinnamon
- 2 tsp. espresso powder or instant coffee granules
- 2 sticks browned butter
- 3/4 cup white sugar
- 3/4 cup dark brown sugar
- 1 tbsp. good vanilla extract
- 2 large eggs
- 1 large egg yolk
- 1 cup semisweet chocolate chips
- 1 cup dark chocolate chips
- 1/2 cup toffee bits
- 1 cup chopped walnuts or pecans
Directions:

Grind oats and stir together oats, flour, baking soda, salt, cinnamon and coffee powder. Set aside.

Brown butter in a saucepan, add in both sugars and cook until smooth. Remove from heat.

Stir in vanilla and eggs.

Stir in flour mixture.

Stir in chips, toffee and nuts. Do not over mix.

Line cookie sheet with parchment paper and scoop about 1/4 cup of cookie dough and chill 4 hours to overnight.

When ready to bake, preheat oven to 350 degrees. Make sure cookies are well spaced and press them down just a bit and sprinkle just a pinch of kosher salt on the tops.

Bake for 13-18 minutes, being sure not to overbake because they will continue cooking once you pull out of the oven.

Enjoy once they cool just a bit with a glass of milk and your favorite movie.
