Fall is here, but we’re not quite ready to say goodbye to some of our favorite summer activities, including our weekly trips to the farmers market. Fortunately, thanks to some local year-round stops, we don’t have to. So in celebration of seasonal flavor, Porch Swing Farms is helping us make the most of our fall finds with a pork chop bowl recipe featuring fresh, locally grown and raised ingredients.
Farmers Market Pork Chop Bowl
Ingredients:

2 cooked Porch Swing pork chops, deboned and thinly sliced

1 cup cherry tomatoes

2 ears corn, cooked and cut off the cob

1 small handful microgreens or chopped lettuce

2 tbsp. mayonnaise (Porch Swing Farms prefers Duke’s.)

1 tsp. sriracha
-
1/2 cup salt
-
1/2 cup sugar
-
ground pepper to taste
Directions:

Preheat the oven to 400 degrees.

In a zip-top bag or covered bowl, combine half cup of salt, half cup of sugar and one quart of water. Mix and add the pork chops. Refrigerate for at least one hour and up to six.

Remove the pork chops, rinse and salt and pepper both sides.

Heat a large nonstick skillet or cast iron pan and add a tablespoon of lard or oil. When hot, add the chops and cook for 2-3 minutes per side until browned.

Transfer the skillet to the oven and cook the chops for about six minutes until the internal temperature reaches 135 degrees.

Add a teaspoon of butter, lard or olive oil to a separate small nonstick skillet. When hot, add in the tomatoes, plus salt and pepper.

Cook, stirring occasionally, until tomatoes are split and browning, about two minutes. They should remain whole.

Mix the mayonnaise, sriracha and one teaspoon of water in a small bowl.

Divide the corn, greens, tomatoes and pork between two small serving bowls and top with the sriracha mayo mixture.
