Dining In with Bill Parkinson

Bill Parkinson, owner of the Parkinson Building Group, shares a bright, simple, seasonal recipe with a side of one of his favorite views.

“Summer is the perfect time to enjoy fresh vegetables and salads for days. Plus, anytime a dressing can double as a marinade for grilled meats or seafood, it’s a win-win.”

Simple Summer Salad

• fresh varieties of lettuce
• cherry tomatoes
• yellow, red and orange bell peppers
• sliced or chopped purple onion

Chili lime dressing/marinade
• zest and juice of 2 limes
• ¼ cup red wine vinegar
• 1 tbsp. coconut aminos
• 1 tbsp. Arkansas honey
• 1 clove garlic, finely minced
• 1/3 cup extra virgin olive oil
• ½ tsp. red pepper flakes
• 1 tsp. cumin
• ½ tsp. coarse salt

Combine dressing ingredients in a bowl, then use to top the salad base or as a marinade for your next cookout.

Summer Setting

When a Chenal homeowner’s dreams of adding on an outdoor kitchen and living area fell through, they joined forces with Parkinson Building Group to build a new home in Roland.
