After a delicious debut last year, CARTI Salute! is back for seconds to raise a glass to cancer care. The alfresco event centers around an impressive selection of wines with dishes from some of the city’s finest restaurants, all expertly crafted to pair with each sip, with this year’s proceeds going to CARTI’s Patient Assistance Program.
Joining the foodie lineup again this year is longtime CARTI supporter Chris Tanner of Samantha’s Tap Room & Wood Grill, The Oyster Bar and Cheers in The Heights. To whet readers’ appetites, the restaurateur is sharing a recipe that began in a New Jersey tavern and that Tanner has since made his own, dubbing it “easy, inexpensive and great.”

Chris Tanner’s Chicken Savoy Recipe
Serves 4-6
Ingredients:
- 6 chicken thighs, skin on
- 6 garlic cloves, minced
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 1 tbsp. Italian seasoning
- 1/2 cup red wine vinegar
- salt and pepper to taste
- 3 whole heads of garlic, cut in half
- 3-4 sprigs of rosemary
Directions:
- Preheat the oven to 400 degrees.
- Make a paste by mixing the garlic, cheese and some of the olive oil.
- Heat the remaining olive oil in a skillet over medium-high heat.
- Salt and pepper the chicken thighs and sear in a skillet on both sides until crispy.
- Spread the paste on the skin side of chicken thighs, then add the whole heads of garlic and rosemary to the skillet.
- Bake at 400 for 20 minutes.
- Remove the chicken from the skillet and put on the stove over a low flame.
- Add red wine vinegar and simmer on low for 10 minutes.
