Grapefruit Smoothie Bowl

- 1 Winter Sweetz grapefruit, peeled and segmented
- 1/2 cup frozen dark sweet cherries
- 1 ripe sliced and frozen banana (can sub 1/2 cup frozen pineapple)
- 1/2 cup frozen cauliflower florets
- 1/4 an avocado (can sub 1 1/2 tbsp. cashew butter)
- 1/2 tsp. vanilla extract
Grapefruit Tart with Coconut Crust

For the crust:
- 1 3/4 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 tsp. salt
- 1/3 cup unsalted butter, melted
- 1/2 cup unsweetened coconut flakes

- 2.5 lbs. Paramount Citrus red grapefruit (about 3)
- juice of 1 Paramount Citrus lemon
- 2 3/4 cup granulated sugar
Avocado Couscous Grapefruit Salad

For the salad:
- 3/4 cup low sodium chicken or vegetable stock
- 3/4 cup uncooked whole wheat couscous
- 2 large avocados, pitted and diced
- 2 large ruby red grapefruit, sectioned and cut into bite-sized pieces
- 1 15-ooz. can white beans (such as navy beans, cannelli beans or white northern beans)
- 1/2 cup crumbled feta cheese
- 3 tbsp. finely chopped fresh mint
- 3 tbsp. finely chopped fresh cilantro
For the dressing:
- 3 tbsp. freshly squeezed lime juice
- 2 tbsp. honey
- 2 tbsp. extra virgin olive oil
- 1/4 tsp. kosher salt
