10 Summertime Recipes Where Peaches Are the Star of the Show

We may be at the official end of National Peach Month, but that doesn’t mean we have any intention of slowing down on the delicious fruity dishes.

Grilled Peaches & Watercress Salad

Ingredients: 

  • 3-4 fresh peaches
  • 4 bunches watercress, stems removed
  • 1/2 cup pecan pieces, toasted
  • 4 oz. crumbled chevre goat cheese
  • 1/2 cup olive oil, divided
  • 1/4 cup golden balsamic vinegar
  • 2 tbsp. honey
  • 1 tbsp. fresh chopped basil
  • salt and pepper

Blueberry Peach Slab Pie

Ingredients: 

For the crust:

  •  2 1/2 cups unbleached all-purpose flour
  •  1 tbsp. granulated sugar
  •  1 tsp. salt
  •  8 oz. unsalted butter, very cold and cut into 1/2-inch cubes
  •  1/2 cup ice water

For the filling:

  • 6-7 ripe yellow peaches, peeled and sliced
  •  8 oz. fresh blueberries
  •  3 tbsp. demerara or turbinado sugar
  •  2 tbsp. cornstarch
  •  1 tsp. freshly squeezed lemon juice
  •  1/2 tsp. freshly grated nutmeg (or 1/4 tsp. ground nutmeg)
  •  1/2 tsp. ground cinnamon
  •  1/8 tsp. ground cardamom
  •  pinch of salt
  •  1 tbsp. unsalted butter, cold and cut into small pieces

Creamy Peach Popsicles

  • 1 1/4 cups vanilla Greek yogurt
  • 1 1/2 cups diced peaches fresh or frozen 
  • 1-2 tbsp. honey or sugar if you’d prefer these sweeter
  • 1/2 tsp. vanilla extract
  • 1/4 tsp. lemon zest
  • 2 tsp. lemon juice

Fresh Peach Salsa

Ingredients: 

  • 3 large ripe peaches (but not overly soft), diced into 1/2 inch dice, skins ok
  • 1/2 a medium red onion, very finely diced 
  • 1/2 a red bell pepper, finely diced
  • 1 medium tomato, finely diced
  • 1 jalapeno, very finely diced
  • 1/4 – 1/2 cup chopped cilantro, tender stems ok
  • 1/4 cup fresh lime juice 
  • 1/4 tsp. salt and pepper, or more to taste
  • 1/4 tsp. chipotle powder (optional)

  • 1/2 cup cane sugar
  • 1 cup water
  • 1 cup fresh squeezed lemon juice

  • 2 tbsp. balsamic vinegar
  • 2 tbsp. fresh lemon juice
  • 1 tbsp. stone-ground mustard
  • 1 tbsp. honey
  • 1 tbsp. chopped shallot
  • 3/4 tsp. kosher salt
  • 1/2 tsp. ground black pepper
  • 1/4 cup extra virgin olive oil
  • 1/2 lb. fresh mozzarella, sliced
  • 2 large peaches, sliced into rounds
  • 2 medium heirloom tomatoes, sliced
