Grilled Peaches & Watercress Salad

- 3-4 fresh peaches
- 4 bunches watercress, stems removed
- 1/2 cup pecan pieces, toasted
- 4 oz. crumbled chevre goat cheese
- 1/2 cup olive oil, divided
- 1/4 cup golden balsamic vinegar
- 2 tbsp. honey
- 1 tbsp. fresh chopped basil

Blueberry Peach Slab Pie

Ingredients:
For the crust:
- 2 1/2 cups unbleached all-purpose flour
- 1 tbsp. granulated sugar
- 1 tsp. salt
- 8 oz. unsalted butter, very cold and cut into 1/2-inch cubes
- 1/2 cup ice water
For the filling:
- 6-7 ripe yellow peaches, peeled and sliced
- 8 oz. fresh blueberries
- 3 tbsp. demerara or turbinado sugar
- 2 tbsp. cornstarch
- 1 tsp. freshly squeezed lemon juice
- 1/2 tsp. freshly grated nutmeg (or 1/4 tsp. ground nutmeg)
- 1/2 tsp. ground cinnamon
- 1/8 tsp. ground cardamom
- pinch of salt

- 3 large ripe peaches (but not overly soft), diced into 1/2 inch dice, skins ok
- 1/2 a medium red onion, very finely diced
- 1/2 a red bell pepper, finely diced
- 1 medium tomato, finely diced
- 1 jalapeno, very finely diced
- 1/4 – 1/2 cup chopped cilantro, tender stems ok
- 1/4 cup fresh lime juice
- 1/4 tsp. salt and pepper, or more to taste
