Grapefruit Smoothie Bowl

Ingredients:

  • 1 Winter Sweetz grapefruit, peeled and segmented
  • 1/2 cup frozen dark sweet cherries
  • 1 ripe sliced and frozen banana (can sub 1/2 cup frozen pineapple)
  • 1/2 cup frozen cauliflower florets
  • 1/4 an avocado (can sub 1 1/2 tbsp. cashew butter)
  • 1/2 tsp. vanilla extract

Grapefruit Tart with Coconut Crust

Ingredients:

For the crust:

  • 1 3/4 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/4 tsp. salt
  • 1/3 cup unsalted butter, melted
  • 1/2 cup unsweetened coconut flakes

For the filling:

  • 3/4 cup sugar
  • 3 tbsp. cornstarch
  • 1 1/2 cups grapefruit juice
  • 3 egg yolks
  • 6 tbsp. butter, cut up
  • 1 drop red food coloring

For the topping:

  • 1/4 cup toasted coconut flakes
  • 2 tbsp. chopped dry-roasted pistachio nuts

Avocado Couscous Grapefruit Salad

Ingredients:

For the salad:

  • 3/4 cup low sodium chicken or vegetable stock
  • 3/4 cup uncooked whole wheat couscous
  • 2 large avocados, pitted and diced
  • 2 large ruby red grapefruit, sectioned and cut into bite-sized pieces
  • 1 15-ooz. can white beans (such as navy beans, cannelli beans or white northern beans)
  • 1/2 cup crumbled feta cheese
  • 3 tbsp. finely chopped fresh mint
  • 3 tbsp. finely chopped fresh cilantro

For the dressing:

  • 3 tbsp. freshly squeezed lime juice
  • 2 tbsp. honey
  • 2 tbsp. extra virgin olive oil
  • 1/4 tsp. kosher salt

  • 1/4 cup granulated sugar
  • 4 tsp. baking powder
  • 1/4 tsp. kosher salt
  • zest from one grapefruit
  • 5 tbsp. cold butter cut into small cubes
  • 1/2 cup fresh grapefruit juice
  • 1/4 cup plain yogurt
  • 1 egg
  • 1 tbsp. milk

For the glaze:

  • 1 to 2 tbsp. fresh grapefruit juice
  • 1/2 cup powdered sugar
