  • 1 apple, peeled, cored and finely chopped
  • 1/4 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 2 tbsp. cilantro or parsley, finely chopped
  • 2 tsp. lime juice OR a tbsp. of lemon juice

Avocado, Tomato and Mozzarella Caprese Salad

  • 2 avocados, sliced
  • 2 ripe tomatoes
  • 1 pound fresh mozzarella cheese
  • 1 1/2 oz. bunch fresh basil leaves
  • 1/4 cup good quality olive oil
  • 1/4 cup balsamic vinegar (or use a balsamic reduction if you prefer)
