'Tis the season for fall decor, menu changes and confusing outfit choices as temperatures dip ever so slightly below boiling.

Whether you're chomping at the autumn bit or you're determined to ride out summer to its bitter end, P. Allen Smith has the perfect recipe to help bridge the seasonal gap.

 

P. Allen Smith's Cranberry Pecan Rice Salad

Ingredients:

For the dressing:

  • 4 tbsp. apple cider vinegar
  • 2 tbsp. lemon juice
  • 2 tsp. crushed garlic
  • 2 tsp. Dijon mustard
  • 2/3 cup vegetable oil
  • 1 tsp. pepper

For the salad:

  • 2 cups cooked rice
  • 1/2 cup dried cranberries
  • 1 cup roasted pecans, chopped
  • 1/2 tsp. ground ginger
  • 1 tsp. orange zest
  • wedges of a seedless orange or tangerine
  • 3 tbsp. sugar
  • 1 green onion, chopped
  • 1 celery stalk, chopped
  • 1/4 red onion

 

Instructions:

Toss all ingredients together with half of the dressing

Cover and chill for 30 minutes. Reserve the rest of the dressing for serving.
